Chole Bhatura


Today's recipe is  Chole Bhatura. This is one of the recipe which I was planning to cook since long time. When Valli announced this theme cooking from a Restaurant Menu. I first checked if there was chole bhatura.  So for today I choose Chole Bhatura under the menu "Subha ho ya shaam" from India House Vegetarian Restaurant. Finally am here with this yummy dish which can be had as a breakfast, lunch or as a snack.  Chole Bhatura is a popular dish from Punjab India.Chole is made wiht the combination of chickpeas and spices. Bhatura is a fried bread made of Maida/ all purpose.


We need:

For Chole curry:

Chana 1cup
Onion chopped 1/2 cup
Tomato puree 1cup
Salt to taste
Cloves 3
Cinnamon 1inch stick
Gralic cloves 2
Ginger 1 inch piece
Chana masala powder 2sps
Chili powder 1sp
Haldi 1/2 sp
Oil 4 sps
Chopped cilantro 1/4 cup

For Bathura:

Maida/ all purpose flour 2cups
Sooji 1/2 cup
Curd 1/2 cup
Salt to taste
Baking powder 1/2 sp
Sugar 1sp

Method:

Add sugar, salt, baking powder, sooji to maida and mix well.
Now add curd or butter milk and mix well.
Add water if required to make a smooth paste.
Finally add little oil and cover it with lid to rest for 3 hrs.
Heat oil for deep frying.
Take little dough( depends on which size you want your Bhatura tobe)
Roll it like chapati using rolling pin.
You may use maida to dust while rolling.
Drop one at a time in hot oil and press it with spatula to puff up.
Thats it  hot Bhatura's are ready to serve.

For making chole we need to soak chand over night and presser cook adding water.
Heat pan add oil and chopped garlic and ginger.
Saute and add chopped onions, cloves and cinnamon.
Cook till onions turn golden brown.
Now add tomato puree, haldi, chili powder and chana masala.
Mix well and cook till it leaves oil.
Now add boiled  chana and salt to taste.
Add the water which is left out while boiling  the chana.
Cook on medium flame  for 10 minutes.
Garnish with cilantro and serve hot with hot bhaturas.
