Egg Rolls Kolkata / Calcutta style

Today was a very tiring day.  Was not in a mood to cook something for  dinner. Had some left over roti's which I wanted to finish off.  Made a very simple but delicious rolls out of the roti's and eggs.   This is the recipe I got to know from one of my Bengali friend and its  very famous in Calcutta. No much cooking needed, just make omelets, fill in the mixture and roll. That's it. Here's the 2nd day post for BM 30  under the theme " Get it Rolled".

We need:


Chapati / Paratha 2
Eggs 2
Chopped onions 4 sps
Chopped cilantro 1sp
Chopped tomato 4sps
Chili powder 1/4 sp
Chaat masala 1/4 sp
Salt to taste
Oil


Method:


Beat eggs in a bowl, add salt and mix well.
Used left over chapathi's here. You can even use the store bought frozen ones too.
Heat skillet and grease it with little oil.
Now add half of the egg mixture as omelet.
Cook on medium to low flame.
After a minute place the chapatti on the omlet and press gently with spatula so that the chapati sticks to the omlet.
Gently flip the chapati to other side to cook.
Make sure the flame is on low now as the chapati is pre cooked, we do not want it to be burnt at this stage.
Once the omlet is cooked  remove and place it on the plate.
Repeat with another chapati.
Add little salt, chaat masala, chopped tomato, cilantro, chili powder to chopped onions and mix well.
Please do this process just before serving, because  if you add  all the ingredients before the  making omlets the mixture may become watery as the onions tend to loose water if added salt.

Now place 1 chapati on a  plate egg side up and  add this onion mixture on top and roll it tight, chapati side being the outer layer.
Serve hot with ketchup or as it is.

This is quite tempting and i hated people in banaglore wen they simply wrapped the omelete over roti calling it egg roll.....nice recipe.
