Today we are starting with 1st week of BM 38. My theme for this week is "Gourmet Rice Recipes".
For day 1 am here with Palak Paneer Pulao. Who doesn't like Palak Paneer, it is one of the popular dish in North India. Made with Palak( Spinach) and Paneer( Indian cottage cheese). You would definitely love this rice dish if you love Palak Paneer. This yummy and spicy pulao is made with palak paneer and some whole spices. This 1 pot meal is quick and easy to prepare. Here goes the recipe.....
We need:
Spinach / Palak 3 cups
Paneer cubes 1 cup
Onion sliced 1/2 cup
Green chili 4
Basmati rice 2 cups
Haldi / turmeric 1/2 spoon
Garam masala powder 1spoon
Cinnamon 1 inch stick
Black peppercorns 10
Bay leaf 2
Cardamom 3
Cloves 4
Cashew nuts 10
Ginger garlic paste 1spoon
Mint leaves / pudina chopped 1/4 cup
Cilantro chopped 1/2 cup
Oil 1/4 cup
Method:
Heat 1 spoon oil and add washed spinach and green chili.
Let it cook on low flame till done.
Cool and make it to smooth paste.
Heat oil in a pan then add paneer cubes.
Fry till golden brown, remove and keep it aside.
In the same oil add whole garam masala's and sliced onions.
Add cashew nuts and ginger garlic paste.
Saute till raw smell disappears.
Now add turmeric, and garam masala powder.
Mix well and add spinach paste.
Cook on low flame till oil floats on top.
Now add 2 cups of washed rice, fried paneer, chopped mint and cilantro.
Mix well and fry for 2 to 3 minutes on medium flame.
Now add 4 cups water and cook on high flame for 5 to 6 minutes.
Give it a stir and reduce to low flame.
Cover with lid and cook till done.
Serve hot as it is or with raita.
