Noodles are my family's favorite dish. Kids love noodles. Noodles are usually cooked in boiling water. Drained and deep fried or stir fried with some veggies or meat. Singapore noodles are stir fried with some veggies, curry powder, soy sauce and meat. This dish is not only famous in Singapore but also famous in England, Australia and American Chinese cuisine.
For the final day of BM 38, I prepared my favorite Singapore Noodles, which can me made within no time. Here you can see how Felicity Cloake has prepared the delicious perfect noodles.
We need:
Rice Vermicelli
Green beans 6
Grated ginger 1/2 spoon
Crushed Garlic 1/2 spoon
Sliced mushrooms 1/2 cup
Sliced Green Onion 1/2 cup
Curry powder 3 spoons
Soy sauce 3 spoons
Green chili finely chopped 1 spoon
Pinch of sugar
Red or green bell pepper sliced 1/4 cup
Peas 1/4 cup
Eggs 3
Peanut or regular oil 2 spoons
Chopped cilantro 1/2 cup
Method:
Boil the water and add vermicelli in it.
Switch off stove and let the vermicelli soak in hot water for 30 to 45 seconds.
Make sure it doesn't become too soft.
Remove and drain water.
Leave it in the sieve to cool down.
Blanch the green beans in boiling water, drain and keep aside.
Add half of the curry powder, soy sauce and sugar to noodles / vermicelli and toss it well.
Heat large pan or wok and add oil.
Once the oil is hot add ginger, garlic, green chili, green onion and remaining curry powder.
Saute for a minute and add green beans,bell pepper, peas and mushrooms.
Stir fry for 2 to 3 minutes and push these veggies to a side in the wok.
Now add the beaten egg and let it cook for a minute or so.
Now scramble the egg and mix well with the veggies.
Now add the noodles and toss everything together for 1 to 2 minutes so that its well combined.
Garnish with chopped cilantro and serve hot.
