Vankaya Ullikaram / Brinjal curry with Onion Chili Paste

 Uttarandhra, sub-region consists of north coastal districts in the Coastal Andhra  region of Andhra Pradesh. This region is also known as Kalinga Andhra. Uttarandhra region comprises of 3 main districts Srikakulam, Vizianagaram and Visakhapatnam Districts.

Cuisine of this area still has its own distinctive flavors and unique taste. People of this region like to eat many of their foods really sweet unlike other regions of Andhra Pradesh. They often cook lentils in Jaggery known as Bellam Pappu  enjoyed with steamed rice and butter.

Poori and Patoli is a favorite breakfast time  or festival time dish. Uppupindi is coarsely broken rice upma steamed with vegetables and tempering seeds.  They cook vegetables in gravies of Fenugreek seeds paste, Mustard seeds paste and sesame seeds paste. Ulli Karam is another popular dish where vegetables are flavored in Shallots or Onion paste.

For day 2, under One state- different Cuisines, am here with another simple yet delicious Vankaya Ullikaram kura ( Brinjal cooked in Onion  and chili paste curry) . Here goes the recipe.....

                                    


We need:

Shallots 5 / Large onion 1
Brinjal 10
Red chili 5
Ginger 1 inch piece
Cilantro chopped 1/2 cup
Cumin seeds 1/4 spoon
Mustard seeds 1/4 spoon
Chana dal 1 spoon
Curry leaves 6
Salt to taste 
Turmeric powder 1/4 spoon
Oil 4 spoons


Method:


Make a smooth paste with onion, red chili, ginger, cilantro and salt.
Keep side. Cut brinjal into long pieces and let them rest in water.
Heat pan add oil and the tempering seeds like cumin, mustard, chana dal and also curry leaves.
Saute for a minute and add the ground paste.
Add turmeric powder and mix well.
Let it cook for 2 to 3 minutes and add brinjal pieces.
Add salt  to taste( remember u added some salt in the ground paste too)
Mix well and cover to cook on medium flame till done.
Make sure to give it a mix in between.
Once done garnish with chopped cilantro and serve hot as a side dish.

Interesting to read this post Sushma - use of jaggery and sweet in andhra everyday cooking is unusual.. And this curry is being bookmarked .. I guess this paste can be used for any veggie
