For day 2 under Nasta Time, am here with a healthy breakfast dish Celery and Oats idly.
Celery is used around the world as a vegetable for the crisp petiole ( leaf stalk). The leaves are strongly flavoured and are used less often, either as a flavouring in soups and stews or as a dried herb. Celery is a staple in many soups specially chicken noodle soup.Celery is used in weight-loss diets where it provides low calorie dietary fibre. Eating celery provides positive net calories with digestion only consuming a small portion of the calories taken in.
Oats are the species of cereal grain grown for its seeds. Oats have numerous uses in foods. Most commonly rolled or crushed into oatmeal or ground into fine oat flour. Also used in baked goods such as oatcakes, oatmeal cookies and oat bread.
Now why not mix celery and oats to make a healthy breakfast dish. Oats powder mixed with celery paste and sooji with some other ingrediants makes a perfect and healthy dish. Here goes the recipe......
We need:
Rolled Oats 1 cup
Sooji / Semolina 1cup
Celery 6 stalks
Red or green chili 2
Butter milk 2 cups
Eno fruit salt 3/4 spoon
Salt to taste
Mustard seeds 1/2 spoon
Chana dal 1 spoon
Cumin seeds 1/2 spoon
Cashew nuts broken 1 spoon
Curry leaves 4
Chopped cilantro 3 spoons
Oil 3 spoons
Method:
Grind oats to course powder and add it to sooji.
In a blender add cut celery , green chili and cilantro to make a smooth paste.( do not add water)
In a small pan make tempering with hot oil, mustard seeds, cumin seeds, broken cashew, curry leaves and chana dal.
Fry till golden brown and add to the sooji and oats mix.
Also add celery paste and salt to taste to the sooji mix.
Now add butter milk just enough to make thick batter. ( do not make the batter too thin or thick).
Now add Eno fruit salt and mix well.
Take a idly cooker and add enough water to steam the idlies.
Grease the idly plates and keep aside.
Pour the idly batter in greased idly plates / moulds.
Place the idly stand in cooker and cover with lid.
Cook for 10 minutes and switch off the flame.
Wait for another 10 minutes to open the lid.
Serve hot with coconut chutney, peanut chutney or tomato chutney with sambar.
Here I have served idly's with Peanut chutney and Curry leaf powder.
