Cucumber is a widely cultivated plant in the gourd family.Cucumbers are grown to eat fresh. Cucumbers help to keep skin healthy also helps in curing constipation and kidney problems. They also deal well with diabetics and also keep blood presser in control. Read in a newspaper recently that cucumbers can treat Cancers and Diabetics.
Today am here with a healthy dish for the people who are suffering with diabetics. This a perfect salad for summer's and winters too. This recipes goes to t he 3rd day, week 2 of BM 60 under the theme " Diabetic Diet / Healthy Diet". Here goes the recipe....
Ingredients:
Avocado 1
Cucumber 1 medium
Lime juice 2 spoons
Crushed Red pepper 1/4 spoon
Chopped fresh cilantro 2 spoons
Salt to taste
Brown organic Sugar 1/4 spoon
Olive oil 1 spoon
Preparation:
Take 1/2 ripen Avocado and cut into bite size cubes.
Peel the skin of cucumber and cut into bite size cubes.
In a large bowl add olive oil, salt, sugar, chili flakes, lime juice and cilantro.
Mix everything together, then add avocado and cucumber cubes.
Give it a stir and refrigerate till you serve.

I have become an avocado fan in the recent months. I combine it with tomatoes most of the time. Like it with cucumber too.
