This is the first post for this year 2016 and I want to start the year with a tasty and healthy dish. Today we are starting with 60th Edition of Blogging Marathon, my theme for this week is Diabetic diet / Healthy diet.
My first recipes is for those who are suffering from Diabetics. A healthy eating plan can help you keep your blood sugar under control. It can keep you prevent , control and even reverse the Diabetes. Avoid foods which are high in sugars, carbs and unhealthy fats. Stick more to vegetables and high protein foods. Some of Diabetic super foods are green onions, cabbage, tomato, Fenugreek leaves, spinach, cauliflower, lemon carrot, tomatoes and many more. So for Week 2 and day 1 of BM 60, am here with a healthy and tasty Cabbage Paratha. Healthy diet for the patients and a good way to feed kids who do not like cabbage. Believe be it worked with my kids, give it a try....

Ingredients:
Grated cabbage 1 cup
Wheat flour 1 1/2 cup
Green chili paste 1 teaspoon
Salt to taste
Crushed cumin seeds 1 spoon
Oil
Preparation:
Add rated cabbage, chili paste, salt, cumin seeds to the wheat flour and mix well.
No need to add water as the moisture in cabbage is sufficient to make a perfect dough.
Add more flour if needed but not water.
Add 1 spoon oil to the dough mix again and set aside for 10 minutes.
Now make small / medium dumplings with the dough and roll it to chapati / roti with the rolling pin.
Heat tawa and cook the paratha on medium heat on both sides.
Add ghee / butter / oil once done.
Remove from flame and serve hot with any pickle.

I think cabbage is such an underused veggie - what a delicious and healthy paratha
Cabbage with it's low glycemic index is a good choice for diabetics and your version parathas are a healthy choice.
