Boondi ladoo is a delicious Indian sweet made on special occasions , specially for religious rituals and for festivals like Diwali and Ganesh Chartuti. Besan / Gram flour is mixed with water to make a smooth batter and poured through a boondi ladle, through this ladle the batter drops down into hot oil like a small droplets which are called boondi. After frying these boondi are soaked in sugar syrup for a while and then given a round / ball shape to make a ladoo. You cant go wrong in making these ladoo if you follow the exact measurements.
Usually the boondi ladoo is in yellow color as the gram flour is yellow color. But today am making this ladoo using 3 different colors. This is a special Marwadi boondi ladoo where they make the ladoo with 3 different colors like yellow, orange and green. Its also called as tirange ladoo, tiranga means 3 and we are using 3 colors. Motiya ladoo, motiya means pearls. Because the droplets are like pearls.
Was planning to make this ladoo since very long time but couldn't as I didn't have the ladle. In my recent India trip I made sure to get the ladle and give it a try. And here you go I made the perfect ladoo as my son wanted. Today we are starting with 4th week of BM 61 and my theme for the week is Indian Mithai. For day 1, am here with a delicious and very popular Indian Mithai " Boondi Ladoo".
Here goes the delicious and every one's favorite boondi ladoo recipe....
Ingredients:
Besan / Gram flour 1 2/3 cup
Fine Sooji / semolina 1/3 cup
Sugar 2 cups
Water 1 1/4 cup
Elachi powder 1/2 spoon
Oil for deep frying
Dry fruits (cashew, raisins) 1/2 cup ( optional )
Food color ( yellow, orange and green)
Preparation:
In a large bowl sieve besan / gram flour and then add fine sooji to it.
Add little water at a time to make a smooth batter.
Make sure no lumps are formed and the batter should be of pouring consistency, similar to the dosa batter.
Cover and set aside for 10 minutes.
Meanwhile heat oil in a kadai / deep frying pan.
Divide the batter into 3 different bowl to mix the colors.
Take 3 to 4 spoons of batter to mix green color.
Take 8 to 10 spoons batter to mix orange color.
Rest add yellow color and mix well.
Now take the boondi ladle and add few spoons of yellow batter in it.
Now tap the ladle with your palms so that the boondi / droplets easily drop into oil.
Fry for a minute and remove the boondi on to paper towel.
Repeat the process for yellow color and then with other 2 colors.
Once the boondi is ready make sugar syrup adding elachi powder and 1 1/4 cup water to 2 cups of sugar.
Bring the sugar syrup to boil, boil till 1/2 string consistency.
While boiling add the yellow color boondi to the sugar syrup and mix well.
Now switch off flame add rest of the boondi and mix well.
Leave it aside for 15 minutes.
Now mix the mixture again and make a ladoo / round balls.
Make sure the mixture is warm enough to make ladoo.
You may not make ladoo of it too hot or too cold.
Store in air tight container and enjoy the yummy boondi ladoo.
