I always used to see fresh corn and cucumber at the road side sellers during late summers and rainy seasons. We also used to see them selling fresh mint and lime juice, sugar cane juice and Fresh coconut water. These used to keep our body cool and the hot summers. Cucumber contain lot of water in it where as mint is a medicinal herb which is used in many medicines to treat stomach pain and chest pain. Sweet corn increases levels of ferulic acid which has anti cancer properties.
For day 2, week 4 of BM 62 and here with this delicious and simple summer salad under the theme " Salads". I named this Summer salad because cucumbers and mint in this dish keeps your body cold during the warm and hot summer days. Here goes the healthy and colorful Corn Salad.....
Ingredients:
Sweet corn kernels 1 cup
Cherry tomatoes 10
Cucumber 1 medium sized
Chopped cilantro 3 spoons
Chopped mint leaves 2 spoons
Red bell pepper chopped 1/4 cup
Scallions / green onion chopped 3 spoons
Lime / lemon juice 4 spoons
Salt to taste
Crushed black pepper 1 spoon
Preparation:
I have used the frozen corn kernels here.
Steam or boil the sweet corn kernels and set aside to cool down.
Let it cool down completely drain water if any then start the preparation.
Take the corn kernels in a mixing bowl, add chopped bell pepper, cucumber, scallions, cherry tomatoes, cilantro and mint leaves.
Give it a toss and add black pepper and salt to taste.
Squeeze in lime juice and mix well.
Pop it in refrigerator for about 1 hour before serving.
