Greek Honey Cake

If you like Baklava, you would definitely love this cake. This sticky and soft Greek honey cake tastes little like the popular Greek Dessert Baklava. Simple cake but tastes different from the regular cakes. This recipe goes to the 3rd week and 3rd day of BM 76 under the theme  "Flavors of Greece".



Ingredients:


All purpose flour 1/2 cup
Baking powder 1/2 teaspoon
Sugar 1/2 cup
Vanilla extract 1/2 teaspoon
Butter 1/3 cup
Eggs 3

For Honey Syrup:


Honey 1/4 cup
Sugar 2 spoons
Water 1/4 cup
Lime juice 1 spoon
Almond slices 3 spoons
Pistachio powder


Preparation:


Preheat oven to 400 F.
Beat eggs, sugar and vanilla extract  in a mixing bowl.
Add melted butter and mix well.
Now add baking powder and flour and stir it well.
Grease the baking tray and pour the cake mixture in it.
Bake for 10 to 12 minutes or until done.
Remove the cake from oven  and let cool down.
Now make honey syrup by adding sugar and water to honey
Boil for 10 minutes and add lime juice.
Remove from flame and add sliced almonds
Mix and spread  the syrup on the cake.
Also sprinkle some pistachio powder on top.
Serve.

The cake looks great , we have so many versions of honey cake and all are different from each other . I remember reading but gave up making it as it is difficult to replace 3 eggs !
