Grilled Vegetable Fajitas

Grilling is a form of cooking that involves dry heat applied to the surface of food from above or below. Grilling is usually done outdoor on charcoal grills or gas grills.  Grilling may also be performed using stove top grill pans which have raised metal ridges for the food to sit on. Grilling is fun during summers, specially in places like parks and beaches.  Most of the parks have grilling machines already placed, you might need to carry gas cylinder or charcoal,  grilling kit and some marinaded vegetables or meat or fish. It is so much fun......

Coming to today's recipe this week I will be posting 3 "Vegetarian grilling" recipes which is my theme for this week. Today we are starting with 76th Edition of Blogging Marathon. So my recipe for week 1, Day 1 is Grilled Vegetable Fajitas. 

Last month kids had Spring break and hubby dear too took off from work. We visited couple of places during the break, where we had  Chicken Fajitas for lunch. They were  served with couple of tortillas, grilled sizzling chicken along with veggies  and some mashed Avocado, salsa, cream, black  beans and cheese. They were so delicious. So today's recipe is Yummy Fajitas but with grilled veggies instead of Chicken.



Ingredients:


Red bell pepper 1 large ( sliced into strips)
Onion 1 medium ( sliced )
French beans 15 ( trim the edges)
Flour Tortillas small 6-8
Avocado 2 sliced
Cilantro chopped 1/2 cup
Chopped tomato 1/2 cup
Grated cheese (optional)
Hot sauce (optional)

To Marinade:


Salt to taste
Olive oil 1/4 cup
Lime juice 1/4 cup
Black pepper 1/2 spoon
Minced garlic 1 spoon

Preparation:


In a mixing bowl add all the veggies and ingredients which are under Marinade.
Mix well and let it set aside for 1 hour.
Mash Avocado and add some lime juice to it, mix and set aside.
I do not have a gas  grill or a barbecue grill, so used panini maker for grilling today :)



Place marinade vegetables onto  grill and cook until tender.
Brush some oil if required.
Warm the tortillas on the grill or on regular pan / tawa.
Add chopped cilantro and tomato in a bowl and mix well.



Remove from pan and stuff with grilled veggies and top it with sliced  avocado, chopped tomato and cilantro mixture, cheese and hot sauce.
