Mini Uttapam

Packing Kids Lunch Box is a big task for me, I hope its the same with all the parents. Its been a big challenge for me, specially with my son. You wont believe I packed just peanut butter & jelly Sandwich the whole school year for his kindergarten. Every year it has been a big challenge for me. But as he grew up, he started eating all types of food and life is easy for an extent for me now. As my little one started school this year, no wonder if she also starts giving me hard time like my son. 

I make sure I pack a fruit, juice and a filling snack or lunch for kids. Most of the time I pack, plain idly with chutney, masala idly, veggi sandwich, cheese quesadilla, veggi or egg chapati rolls etc.......
For today I have packed mini uttapam, blueberries, sliced carrots and fruit juice. I recently got a mini pancake pan, thinking it will be useful for pancakes as well as mini dosa or uttapam. And the mini pancake pan makes perfect pancakes, dosas and uttapams. 

Today we are starting with 4th week of BM # 78. MY theme for the week is Kids Delight- Lunch box recipes. My first dish for this week is Mini Uttapam. I have used grated cabbage, onion and carrots here. You can even add chopped bell pepper, corn, tomato or any other vegetable which you like. Here goes the recipe.........




Ingredients:


Idly batter  2 cups
Finely chopped onions 3 spoons
Finely chopped cabbage 2 spoons
Grated carrots 3 spoons
Finely chopped Green chili 1 ( optional)
Chopped fresh coriander leaves 2 spoons
Salt to taste
Oil 


Preparation:

Add salt to the idly batter and set aside.
Add all the ingredients in a separate bowl and mix.
Heat non stick dosa pan / mini pancake pan.
Pour small ladle full of batter and spread it round.
Sprinkle one or 2 spoons of  vegetable mix on top.




Add few drops of oil and let cook for 1-2 minutes on medium flame.
Flip around to cook for another 1 -2 minutes.
Remove and repeat the process.
Serve hot with chutney or ketchup or hot sauce.

i love ur grill, this is always a preferred snack in the dabba as they remain soft compared to dosas

wow sushma, love ur grill girl! i had a similar pan with 7 holes.
uthappams are great for dabbas, as they soft for longer time and the seasoning can be versatile!
