Today's recipe is made for a special person on her special day. My cute little princess my daughter
"H" who turned 8 last week is a big fan of whip cream and strawberries. So I thought why not make some thing special for her birthday with these 2 ingredients. Couple of weeks ago my daughter saw a picture of puff pastry fruit tarts on a magazine while we were waiting at doctor's office. I promised to make them for her once she gets well. I vaguely remember the recipe on the magazine but have managed to make them with what ever I could recollect.
As " H's " birthday was falling on weekend and also her first birthday in our new home she wanted to invite her old and new school friends for the party. We decorated the room with her this year's favorite character " Unicorn ". She had a lovely time with her friends and so did her friends. I couldn't make the fruit tarts for her friends as couple of them had berry allergies. So it was a simple pizza and cake party. We gifted her Hatchimals which she was wanting to have for quite some time now.
Puff pastry fruit tarts recipe goes to 2nd day of Blogging Marathon 96 under the theme " Festival / Special Day ". Here goes the recipe.......
Ingredients:
Puff pastry sheets 2
Strawberries and blueberries ( or any other fruits of your choice )
Cream cheese 3-4 oz
Heavy cream 1/2 cup
Egg 1
Powdered Sugar 3/4 cup
Granulated sugar 2 tbsp
Preparation for Filling:
Using electric hand mixer whip heavy cream in a mixing bowl until soft peaks form.
Add 1/4 cup of sugar and whip again until stiff peaks form.
Keep chilled until ready to serve.
In a separate mixing bowl whip cream cheese until soft and fluffy using hand mixer.
Add rest of the powdered sugar whip again until nicely combined.
Keep chilled until ready to serve.
Preparation for pastries:
Thaw puff pastries for about 25-30 minutes.
After 20 minutes, Preheat oven to 350 degrees.
Cut each pastry sheet into 9 equal squares.
Mark or cut a square inside each square ( do not cut all the way through )
Transfer the pastries onto greased baking sheets leaving 1 inch space apart.
Beat egg in a small bowl and add 1 spoon water, combine well.
Brush the puff pastry squares with egg mixture.
Sprinkle some sugar on top and bake 10-15 minutes until they are well puffed up.
Remove, using spoon or fork gently press the center square to collapse while they are still warm.
Filling the Pastries:
The pastry squares have be at room temperature to add the filling.
Here you can add filling 2 ways.
. Combine whip cream and cream cheese mixture together.
. Use both whip cream and cream cheese separately.
Which ever option you choose add the filling into piping bag fitted with your choice of tip.
Pipe filling into pastry squares ( this process have to be done just before serving )
Top the filling with your favorite fruits ( I have used strawberries and blueberries )
Serve immediately.
