Turkish Delight or Lokam is a popular Soft and jelly kind of candy originating from Turkey. It is made of sugar and corn starch.The original recipes calls for sugar, corn starch and rose water for color and as a flavoring agent . Hazel nuts, almonds, Pistachio may also be added to the preparation. In Greece, Turkish Delight also known as Loukoumi has been very popular delicacy since 19 century.
This delicious treat or candy goes to the final day of week 1, Blogging Marathon 98, under the theme "Candies come in different shapes". The sugar syrup consistency and the quantity of corn flour has to be exact so has to get the nice texture. Once cooking process is done its need at least 7 hours to set. If you see my picture I haven't got the perfect texture as I have coated them with sugar powder in just 4 hours, not giving proper time to set. Lesson learnt hahaha...... So make sure you give it sometime to get perfect texture. Check out the ingredients and procedure for the delicious Turkish Delight......
Ingredients:
Sugar 2 cups
Water 3/4 cup for sugar syrup
Water 1 1/2 cup for corn flour mixture
Corn Flour / Corn starch 1/4 cup
Cream of Tarter 1/2 tsp
lemon juice 1 tsp
Rose Syrup 1 tbsp
Powdered sugar 1/2 cup + 1 tbsp corn flour for garnish
Preparation:
In a sauce pan add sugar and 3/4 cup water.
Mix well and bring it to boil.
Add lemon juice to sugar syrup and mix thoroughly and continue boiling till thick consistency.
To check the proper consistency of syrup, take a small bowl of cold water and drop little syrup in it.
If the syrup comes together to make soft ball switch off flame and set aside.
In a wide non stick pan add corn starch / corn flour and cream of tarter along with 1 1/2 cup water.
Mix thoroughly with out lumps.
Now place the pan on stove and cook on medium flame.
Make sure you stir the mixture continuously till the mixture becomes thick.
Make sure no lumps are formed.
Once the mixture becomes thick add sugar syrup little at a time and keep stirring.
Add Rose syrup and continue stirring.
Keep the flame on medium to low flame.
Continue cooking till the mixture thicken and looses from the corner of the pan.
Grease a flat glass dish or any flat plate.
Transfer the cooked corn flour mixture or lokum into the plate and let it cool for about 6-7 hours.
Now mix powdered sugar and corn flour.
Cut the cooled lokum into cubes.
Add the cubes to powdered sugar to coat them well.
Transfer to serving bowl.
Enjoy the delicious Turkish delight with you family and friends.

Absolutely stunning and wow ! I simply love these lokums , but since they are just sugar resist eating them . But I must say it is a work of patience and I have been actually wanting to make these , but my patience level puts me down .

These lokums are surely addictive. I made similar ones during Christmas using agar-agar. Need to try it with corn starch though.
The candy looks so tempting.. never tried it.. I like that it is made with cornstarch flour instead of gelatin..Very nice share..
