Haryana is a state in Northern India, surrounding by New Delhi on 3 sides. Haryanvi Cuisine is famous for its simple cooking and is mostly vegetarian. Most popular dishes being kadhi, pakoda, besan masala roti, churma, singri ki sabzi, tamatar chutney. Aloo chutney pulao is one of the authentic dish from Haryana. The flavors of fresh coriander and mint chutney in the pulao gives you a unique taste and freshness. The chutney can be made ahead and stored in refrigerator. Usually baby potatoes are used to make this dish instead of regular cubed or diced potatoes.
Haryanvi Aloo Chutney Pulao goes to 9th day of BM 99 under the mega theme " Biryani / Pulao / Kichidi with Grains".
Ingredients for Chutney:
Mint leaves 1/2 cup
Coriander leaves 1 cup
Cumin seeds 1/2 spoon
Lime juice 1 spoon
Ginger 1 inch
Garlic cloves 4
Salt to taste
Ingredients For Pulao:
Basmati Rice / long grain rice 1 cup
Baby Potatoes 6
Onion 1 small slices
Cardamom 2
Cinnamon 1 inch
Bay leaf 1
Cloves 3
Salt to taste
Oil 2 tbsp
Water 1 1/2 cup
Chopped cilantro for garnishing
Preparation:
Wash and soak Basmati rice for 30 minutes.
Add all the ingredients under chutney and grind into smooth paste.
Add very little water if required.
Peel the skin of baby potatoes and prick them.
Marinate the potatoes in chutney for 10-15 minutes.
Heat oil in presser cooker and add all the whole spices.
Saute for few seconds and add sliced onions.
Saute till onions turn light brown.
Now add the marinated potatoes with chutney.
Add salt to taste and cook for 4-5 minutes.
Now add soaked rice and fry the rice for 3-4 minutes.
Add 1 1/2 cup water and mix thoroughly.
Cover and cook for 2 whistles.
Let the presser release naturally before opening the lid.
Serve hot with cucumber & carrot raita.

I am looking at that rice with awe. The grains look so perfectly made and so long. The chutney pulao looks vibrant and sounds very flavorful with the cilantro - mint base.
I am all up for rice recipes with mint and cilantro. This is very inviting especially with that potatoes.
The rice has turned out perfect Sushma, with that chutney and baby aloo, it must have been a feast!
This is one of our fav recipes this month. The green chutney and aloo makes up a delicious combination in this rice.
