Korralu Khichdi ( Foxtail Millet )

Foxtail millet is rich in dietary fiber, protein and low in fat. Korralu or Foxtail millet is a common food in some parts of India. Fox tail millet's are completely vegan and can also control diabetes. Millets can be replaced with rice and can be made many dishes like pongal, pulao, curs and tamarind based dishes.

Korralu / Millet Kichidi is a complete meal in itself. Adding dal or lentils along with mixed veggies makes this dish a rich and filling meal for all ages.  Serve this  warm Kichidi  with pickle and some chips to munch. This dish goes to day 3 of BM 99-Mega Marathon.





Ingredients:


Foxtail millet  1/2 cup
Toor Dal 1/2 cup
Carrots 1/4 cup
Beans 1/4 cup
Green peas 1/4 cup
Tomato 1 small
Grated ginger 1/2 tsp
Cumin seeds 1 tsp
Turmeric powder 1/2 tsp
Garam masala 1/2 tsp 
Ghee / Oil / Butter 2tbsp


Preparation:



Wash millets and dal  thoroughly and soak for 1 to 1 1/2 hour.
Heat oil in a presser cooker, add cumin and ginger.
Saute for few seconds and add all the chopped veggies ( peas, carrots, beans and tomato )
Saute for 4-5 minutes on medium flame.
Add turmeric powder, garam masala and salt to taste.
Cook till tomatoes turn soft and mushy.



Now drain the water from soaked dal and millets and add to the cooking veggies.
Saute for 4-5 minutes and add 2 1/2 to 3 cups water depending on how softer you want the khichdi to be.
Presser cook on medium to low flame for 2 whistles and switch off flame. 
Let the presser completely release from the cooker before you open the lid.
Add a tbsp of ghee or butter and mix well before serving.
Serve hot with pickle.
