Handvo is a savory vegetable and lentils cake originating from Gujarat, India. Traditional Handvo is made with lentils and grated bottle gourd along with spices. Now a days Handvo is made with any vegetable of your choice. I have added grated carrots, cabbage, bottle gourd and chopped cilantro. Once the batter is ready its either baked or cooked on tawa till done. Then temered with mustard, cumin , curry leave sand sesame seeds. This dish makes a wonderful snack or a filling dish which can be served at any time of the day. This savory cake can be served with ketchup or green chutney.

Ingredients:
Raw rice 1 cup
Chana dal 1/2 cup
Toor dal 1/4 cup
Udad dal 1 tbsp
Yogurt 1 cup
Grated carrot 1/2 cup
Grated bottle gourd 1/2 cup
Grated cabbage 1/4 cup
Chopped green chili 1 tsp
Chopped cilantro 1/4 cup
Ginger garlic paste 1/2 tsp
Salt to taste
Sugar 1 tsp
Chili powder 1 tsp
Turmeric powder 1/2 tsp
Eno 1 tsp
Oil fruit salt 1 tbsp
For tempering:
Sesame seeds 1 tbsp
Cumin seeds 3/4 tsp
Mustard seeds 1/2 tsp
Curry leaves 10
Oil 1 tbsp
Preparation:
Wash and soak rice and lentils together for 5 hours.
Drain water, add yogurt to lentils and grind it to smooth paste.
Now add all the grated veggies and chopped cilantro.
Also add ginger garlic paste, chili, turmeric powder, sugar, salt and 1 tbsp oil.
Mix everything well.
Finally add eno fruit salt and mix well.
In a non stick tawa, add 1 tbsp oil and add all the tempering ingredients.
Once they are roasted well add the lentil batter.
Turn the flame to low to medium, cover and cook for 10 minutes.
Flip the Handvo and cover to cook on other side.
Once Handvo is nicely roasted and cooked completely remove and serve hot with a cup of tea.
Serve with ketchup or green chutney.

Very nicely done Handvo Sushma, I made a tawa version too and loved the crispy texture!
Perfectly done Handvo Sushma. It looks delicious.
I usually opt the baked version and have never tried the pan one. It has come out good, looks like a decked up dibba rotte.
This is the first time I made a pan handvo , its a super wuick version . And equally delicious . Yours has come out perfect !
The pan version certainly looks like a glorified Dibba rotte, right but it has a unique taste of its own. Love it.
I too made the pan version only. looks so delicious and healthy too with addition of dals and veggies
