Ratlami sev is a famous snack from Madhya Pradesh made with gram flour. Sev is very popular in Indore, Ujjain and Ratlam where many snacks which consist of sev as main ingredient. In MP, sev is used as side ingredient in almost every chaat varieties especially Ratlami Sev which is made from cloves and chick pea flour. Lot of spices are mixed to enhance the flavor. This is spicy and crunchy snack specially made during Diwali and other festivals.

Ingredients:
Gram Flour / Besan 1 cup
Chili powder 1/4 tsp
Turmeric powder 1/4 tsp
Baking soda 1/4 tsp
Ginger powder 1/4 tsp
Pinch of Hing / Asafoetida
Salt to taste
Lime juice 1/2 tsp
Oil for deep frying + 2 tbsp
For spice powder:
Cloves 1/4 tsp
Carom seeds 1/4 tsp
Fennel seeds 1/4 tsp
Black pepper 1/2 tsp
Cardamom 1
Cinnamon stick 1/4 inch stick
Preparation:
Heat pan and dry roast cloves, cinnamon, cardamom, black pepper, carom seeds and Fennel seeds.
Blend the spices to fine powder.
In a mixing bowl add besan, turmeric powder, chili powder, salt, ginger powder, baking soda, hing, lime juice and spice powder.
Combine everything well, now add 2 tbsp oil and mix it to crumbly texture.
Now add enough water to make a smooth dough.
The dough will be little sticky, but that's ok ,do not make the dough too smooth.
Grease the Sev maker and the medium size net plate.
Heat oil in deep kadai.
Make sure you turn the flame to low when you are ready to squeeze the dough in oil.
Place the dough in the sev maker or muruku maker and gently press directly in oil.
Once the sev is fried a bit gently flip it around to fry on other side.
When the sev turns light golden brown remove and place them on paper towel to remove excess oil.
Once the sev is cold or comes to room temperature, gently crush them to make small pieces.
Store in air tight container and serve.

Your version of the sev looks just as awesome. The spices definitely would have kicked up a punch.
Interesting to see the different variations of Ratlami Sev - like the way you have presented it in a jar , the spice blend of this is sev is really unique and gives a good kick .
Love the presentation and cute little jar. Would love to grab the entire jar. Ratlami sev looks super tempting
