Pithore is a healthy and delicious Rajasthani Delicacy made with gram flour. This is a quick lip smacking snack rich in iron and protein. This is a low calorie tea time snack which is also great for diabetic patients. Adding dash of lime will give this dish a nice tangy flavor.
This recipe goes to day 12 of Mega Marathon theme " Sweets and Snacks".
Ingredients:
Besan / Gram Flour 1 cup
Yogurt 1 cup
Fenugreek leaves / Methi 1/4 cup
Turmeric powder 1/2 tsp
Chili powder 1/2 tsp
Ginger paste 1/2 tsp
Green chili paste 1/2 tsp
Chopped coriander 1/2 cup
Lime juice 1 tbsp
For Tempering:
Cumin seeds 1/2 tsp
Sesame seeds 1 tsp
Asafoetida / hing a pinch
Oil 2 tbsp
Preparation:
In a mixing bowl, combine together besan, methi, chili powder, turmeric powder, ginger paste, chili paste, salt, 1/2 of chopped coriander leaves and yogurt.
Add 1/2 cup to 3/4 cup water to make a pouring consistency batter.
Grease a thali or plate and set aside.
Heat 1 tbsp of oil in a non stick pan.
Slowly pour the batter into pan and cook on low to medium flame stirring continuously.
Cook till the batter thickens and leaves the leaves the sides of the pan.
Now pour the mixture immediately onto greased thali and spread evenly to get a uniform layer.
Set the thali aside for 15-20 minutes.
Once it cools down cut it into equal squares or diamonds.
Tempering :
Heat 1 tbsp oil in a wide pan and add cumin seeds, sesame seeds and hing.
Saute till the seeds splutter / crackle.
Add the cut Pithore pieces and gently mix so that the tempering coats the pieces well.
Remove and arrange the pieces on a serving plate.
Sprinkle lime juice on top of the pithore and garnish with chopped cilantro.
Serve hot.

Wow ! Truly lup smacking snack ! And so well made ! I make these squares , but the addition of methi gives them a new dimension . Let me try these soon , i know that we all will love these tempered methi pithods .

Wow! such a healthy snack Sushma. They sound very similar to the Gujarati muthia except that these are not steamed.
Pithore has been on my to do list for a long time after I tasted at a friends place. They are delicious. Yours turned out really well. Good share Sushma.
