Sabudana Vada also called as Sago is a traditional snack from Maharashtra. Like all other vadas these are also crunchy and melt in mouth vadas. These delicacies from Maharashtra are a filling and nutritious snack usually served during festivals and consumed during fast / upvas, specilaly during Navratri. Adding roasted and crushed peanuts gives this vadas nice crunchy taste. THis makes a great snack to prepare during monsoon season too.
Sabudana vada goes to day 16 of Mega Marathon theme " Sweets and Snacks".
Ingredients:
Sago / Sabudana 1 cup
Boiled & mashed potato 2 small
Roasted & crushed peanuts 1/2 cup
Chopped green chili 1 tsp
Chopped cilantro 1/4 cup
Grated ginger 1/2 tsp
Cumin seeds 1/2 tsp
Lime juice 1 tsp
Chili powder 1/2 tsp
Salt to taste
Oil
Preparation:
Wash Sabudhana thoroughly and soak for 3 hours.
Drain water and set aside for 2 hours.
Now add all the ingredients to sabudhana and mix well.
Make lemon size equal balls with the mixture.
Now heat appe pan, add few drops of oil in each mould.
Place the sago balls in the appe pan add few more drops of oil.
Cover and cook on medium heat for few minutes.
Keep turning the vada to other side so that it cooks all over evenly.
Cook till nice and crisp.
Make sure to cook on medium heat, so that the vadas cook inside too.
Remove and serve hot with green chutney or ketchup.
Note:
You can even deep fry these vada's on oil.
Again make sure to fry on low to medium heat to cook nicely from inside out.

Wow ! Sabudana Vadas in a appe pan is a great idea and so well made . No trace of oil , i must try these vadas , they are surely a guilt free snack .
These are really superb! What an idea to make these in appe pan and it surely turns out guilt free, very good dish Sushma.
The idea of using appe pan is super. One gets to enjoy the sabudana vada without any guilt.
Love your idea of making these Vadas using the appe pan. Sago tends to absorb oil and you controlled it in a innovative way. Vadas turned out really nice.

Wow.. we can enjoy these sabudana vada guilt free. Good idea to use paniyaram pan and they have turned out so crispy
