Carrot Raita or Gajar ka Raita is an Indian side dish to be precise it is an accomplishment made using yogurt, grated carrots and some spices. It is a perfect dish to be served with any spicy rice dish. Yogurt is served in every household in every meal they eat, specially in summers as it cools the body.
Raita's can be made in many different ways with many different veggies. Today I will be preparing raita with just carrots and spices. Some people like to add tempering made with oil and mustard to raitas. Our family likes it with out tempering so am not adding it today. Its totally optional.
This recipe goes to day 3 week 2 of Blogging Marathon 113 under the theme " Pick one and do 3".
Ingredients:
Grated carrots 1 cup
Yogurt 1 cup
Chopped green chili 1/4 tsp
Chopped cilantro 1 tbsp
Roasted cumin powder 1/2 tsp
Salt to taste
Preparation:
In a mixing bowl beat the yogurt to nice and smooth.
Add chopped green chili, cilantro and grated carrots.
Also add salt and roasted cumin powder.
Mix everything well and serve.
That's it as simple as that.

That is a yummy looking carrot raita. I think I can eat it just as is but it looks perfect to serve along with the biryani.
It is so yummy that I don't even need a main dish to go with it. :)
Carrot raita pairs really well with spicy Pulao and biryanis. That bowl looks really nice!
