As I said earlier carrots can be consumed as it is or by cooking or steaming them. Today's recipes is one of the simplest dish that can be served as a salad or snack or as a side dish with rice or roti. No cooking required, just add tempering to the grated carrots and you are good to serve. I would suggest add the tempering just before serving or consuming to get a crunchy and nutty texture from the dals. Chopped green chili can be added raw or cooked along with tempering.
This simple and delicious Carrot salad which takes just 5-10 minutes to prepare goes to week 2, day 2 of Blogging Marathon 113 under the theme " Pick 1 ingredients and do 3".
Ingredients:
Grated carrots 2 cups
Chopped green chili 1 tsp
Lime juice 2 tbsp
Chopped cilantro 1 tbsp
Turmeric powder 1/4 tsp
Udad dal 1 tbsp
Chana dal 1/2 tbsp
Mustard seeds 1/4 tsp
Cumin seeds 1/2 tsp
Curry leaves 6
Oil 3/4 tbsp
Salt to taste
Preparation:
In a mixing bowl add grated carrots, chopped green chili and salt to taste.
Mix and set aside.
Lets prepare tempering by heating oil.
Add mustard seeds, once they splutter add cumin seeds, chana dal, udad dal, curry leaves and turmeric powder.
Saute for few seconds and add the tempering to the grated carrot.
Mix everything well.
Now add lime juice and chopped cilantro.
Serve as a salad or as a side dish with rice or roti.

Simple and yummy salad. This is called kosumbari in Karnataka and was a frequently made one while growing up.
This is such a colorful, healthy and easy to make salad. The addition of lentils in tempering adds nice crunch to the dish.
I was about to mention kosambari too! The only difference is it has soaked moongdal too sometimes. Grated carrots with chilies and lemon juice is a great combination
