Quinoa is rich both in fiber and protein, had fewer calories and carbohydrates than white rice. On
the other hand brown rice is recommended for a healthy diet because it contains extra nutrients,
extra protein and fiber. It also lowers cholesterol and controls blood sugar levels. Today I will be
preparing dosa with these 2 ingredients - Brown rice & Quinoa. Just as regular this needs to be
soaked over night , grind to smooth batter and then ferment over night. This recipe goes to Week 4
day 3 of Blogging Marathon 120 under the theme "Kids Delight - Healthy Breakfast".
Ingredients:
Brown rice 2 cups
Quinoa 1 cup
Udad dal 1/2 cup
Fenugreek seeds 1/2 tsp
Preparation:
Wash all the ingredients twice or thrice.
Soak in water for 8 hours or over night.
Blend the ingredients nice and smooth with little water.
Cover and let it ferment for 8 hours or overnight.
Once the batter is fermented well, add salt and mix well.
Heat a non stick tawa or dosa pan, pour 1-1 1/2 ladle full of batter and spread it in a circular motion.
Add some oil or ghee on top and let it cook for a minute or so.
When you see the dosa leaving the edges, slowly lift it with a spatula to flip on to other side.
Cook for a 30-40 seconds fold and serve hot.
Serve with potato curry, sambar or any type of chutney.

I am no yet to try quinoa in dosa batter. Will give it a try soon! This is definitely more healthier than our regular dosa batter!
This is a great recipe to use quinoa. I add them in adai batter, but have to try making it with brown rice for dosa. The dosa have come out so lovely.
