Aloo Gobi ( Dry )

 Aloo Gobi is a popular Indian dish made with potatoes, cauliflower and some Indian spices. This is a

 simple side dish which goes very well with rotis, chapati or even sambar or rasam rice. I have not

 added onions or tomatoes to this  dish as I wanted it to be little dry. If you like you can add them too,

 but do not add water if you want this curry to be a dry side dish.

This recipes goes to week 2 day 2 of Blogging Marathon 122 under the theme " Dry Side Dishes".




Ingredients:


Potato / Aloo 2 large

Cauliflower / Gobi florets 2 cups

Cumin seeds 1 tsp

Chopped garlic 1 tsp

Curry leaves 5

Chopped green chili 1 tsp

Coriander powder 1 1/2 tsp

Cumin powder 1 tsp

Red chili powder 1 tsp

Turmeric powder 1/2 tsp

Salt to taste

Chopped coriander 1/4 cup

Oil 2 tbsp




Preparation:


Boil 4 cups water and add potatoes and cauliflower florets into it.

Cook till they are 70% done.drain water and  set aside.

In a deep kadai, add oil, cumin seeds, chopped garlic, green chili and curry leaves.

Saute for a minute and add  turmeric powder,  coriander powder, cumin powder, salt , chili powder

 and 1/2 cup water and mix and cook for a minute.

Now add cooked potatoes and cauliflower.

Gently mix everything well so that the masalas are coated well to potatoes and cauliflower.

Cover and cook for another 4-5 minutes.

Finally garnish with freshly  chopped coriander and serve.

Aloo gobi works so well as a gravy as well as a dry side dish. Perfect side for rotis and rice!
