Sambar is a popular South Indian stew made with lentils, vegetables, tamarind and some spices. It is
a everyday dish typically eaten with idly, dosa, uttapam and steamed white rice. It is said that Sambar
provides a complete nutrition to the body as it is protein packed.
Sambar powder or the spice powder which is added to this dish plays a key role in the dish. A variety
of lentils and spices are used to make Sambar powder. There are many variations of preparing
Sambar powder across India. Today I will be talking about the Smabar powder which my mom
makes and stores in refrigerator for 1-2 months. Lets get started with the list of ingredients and
procedure.
This recipe goes to Week 4, Day 1 of Blogging Marathon 122 under the theme " Lets make some
Condiments".
Ingredients:
Toor dal 1 cup
Udad dal 1 cup
Chana dal 1 cup
Coriander seeds 1-1/2 cup
Cumin seeds 1/2 cup
Fenugreek seeds 1/4 cup
Black pepper corns 1 tbsp
Rice 1 tbsp
Dry red chili 20
Curry leaves 1 /2 cup
Salt to taste
Preparation:
Dry roast all the dals separately till nice aroma comes.
Similarly dry roast all the other ingredients separately till nice and brown.
Let all the ingredients cool completely.
Grind in a blender till nice and smooth powder.
Store in air tight container for up to 3 months.
