Sambar is a lentil based vegetable stew popular in South India. There are different variations to
Sambar. Each household makes it differently. Add the veggies as per your taste and interests. I add
just the carrot and shallots if am preparing Sambar for tiffins. But when I serve with rice I make
sure to add most of the veggies like brinjal, bhindi, carrot, beans , tomatoes and must and should
shallots. I do not add Sambar powder while making for Tiffins. Again its up to your taste and
preferences if you want to add any ingredient or no. The below recipe is how I make Sambar for my
family.
This recipe goes to Week 2 Day 3 of Blogging Marathon 128 under the theme " Tiffin Side Dishes ".
Ingredients:
Toor dal 1/2 cup
Mung dal 1/4 cup
Shallots 1 cup
Chopped carrots 1/2 cup
Chopped tomato 1 cup
Turmeric powder 1/2 tsp
Chili powder 1 tsp
Salt to taste
Tamarind pulp 1 tbsp
Slit green chili 3
For Tempering:
Curry leaves 6
Udad dal 1 tsp
Cumin seeds 1 tsp
Mustard seeds 1/2 tsp
Red chili 2
Oil 2 tbsp
Preparation:
Wash toor dal and mung dal 2-3 times and presser cook for 3-4 whistles/
In a deep pan heat oil and add the tempering ingredients.
Saute for a minute and add shallots and slit green chili.
Cook for 2 minutes and add chopped carrots and tomato.
Also add turmeric powder and salt.
Cook until tomatoes turn mushy, now add the cooked and mashed dal.
Add 4-5 cups of water ( the consistency which you want the sambar to be )
Add chili powder, tamarind pulp and bring the sambar to boil.
Cook the sambar on medium to low flame till boiling point.
Adjust salt and add chopped coriander leaves.
Serve hot with idly, dosa or vada.

I have never tried Sambar with a mix of mung dal, must be lighter! Will give it a try the next time I make it. The recipe sounds doable and different .
We love this sambar and often make it for Idlis, very good choice!
I always make sambhar with either toor dhal or mung dhal but the mixture of these would add amazing flavors! I am bookmarking to try this delicious sambhar and your picture with idli and vada is inviting! A comfort feast for us!
I usually go with toor dal and add sambhar powder as well. Sambhar makes such a delicious accompaniment to idlis / vadas.
A delicious version for sure. I love sambar in all its variety.
