Potato has always been my favorite vegetable. I just love anything with potato, my kids love potato
fry when served with some Pappu charu / Sambar. Very very simple and delicious dish which
anyone can make it. Just follow the simple tips which I will mention at the end of the recipe to
make potato pieces nice and crispy.
This recipe goes to week 2 day 1 of Blogging Marathon 129 under the theme " Cook your favorite
food".
Ingredients:
Large potatoes 4
Curry leaves 6
Red chili 1
Mustards seeds 1 tsp
Cumin seeds 1 tsp
Turmeric powder 1/2 tsp
Salt to taste
Kura karam / curry chili powder 1 -1/2 tsp ( adjust as per taste )
Oil 2 tbsp
Chopped fresh coriander 1/4 cup
Preparation:
Peel the skin of potatoes and chop them to small pieces or what ever size and shape you prefer to.
Wash them for 2-3 times so that most of the starch is removed.
In a non stick pan heat oil, add mustard seeds, cumin seeds, curry leaf and red chili.
Saute and add potato pieces, give it a stir and let cook for 5 minutes on medium flame.
Now add turmeric powder, mix it well and cook further for another 5-7 minutes.
The potato pieces tend to stick to the bottom in that case turn the flame to low for a while and cook.
If you think the potatoes are completely cooked and crispy, now is the time to add salt and
chili powder.
Mix and cook for another minute for so and switch off the flame.
Garnish with chopped coriander and serve hot.

Tips:
Make sure to wash the potato pieces 2-3 times to remove all the starch.
Do not keep stirring the vegetable too much once the cooking process starts.
Add salt only when the potato is cooked and turns crispy.
Adding salt before the potato is cooked or stirring it too often makes the potato pieces soft and
mushy.
Cook on medium to high flame and stir only when you think the potatoes are sticking to the bottom
of the pan.

Potatoes can never go wrong in any form. so crispy and tasty. Wish to pick the whole plate
No one will object to this crispy aloo fry even if I make it every day. It is I who should feel guilty :))
But seriously it is looking amazing.
