Paneer is packed with protein and other healthy nutrients like Calcium, B12 and iron. Paneer is a
major source of protein for vegetarians. There are many dishes that can be made with paneer.
Cauliflower on the other hand is an extremely healthy vegetable that's significant source of
nutrients. Its unique plant compounds reduce the risk of several diseases like heart disease and
even cancer. It helps in weight loss as well. Cauliflower is very low in calories and high in Vitamins.
Today I will be showing you a simple yet healthy and delicious snack recipe with paneer and
cauliflower. It is a very filling and a complete meal in itself who are on a diet plan. Perfect snack
for kids for their lunch boxes or after school snack.
This recipe goes to Week 4 Day 1 of Blogging Marathon under the theme " Kids Delight - Healthy
Snacks".
Ingredients:
Grated Cauliflower 3/4 cup
Grated paneer 1 cup
Chopped cilantro 1/4 cup
Salt to taste
Chili powder 1/2 tsp
Turmeric powder 1/4 tsp
Garam masala 1/4 tsp
Chopped green chili 1/2 tsp ( optional )
Lime juice 1 tbsp
Corn flour 4 tbsp
Oil as needed
Breadcrumbs 1 cup
Preparation:
Add all the ingredients in mixing bowl except oil.
Skip adding green chili if you serving small kids.
Mix everything well and make small cutlets / tikki out of the mixture.
In a small bowl add 1 tbsp corn flour and 1/4 cup water, mix and set aside.
Now dip each cutlet in the corn mixture and then drop them breadcrumbs to coat them all over.
If you want to deep fry, heat oil in a kadai and drop 2-3 tikkis at a time to fry until nice and crisp.
If you are on diet plan and want to avoid too much oil shallow fry them a non stick pan with very oil.
If you want to skip oil totally, air fry them until they turn golden brown.
Serve the tikkis with any chutney or ketchup.

This looks lovely Sushma. Is there any substitute for the bread crumbs? Just looking for a low carb option and hence the question.
@ Vaishali - Yes it will definitely ooze out water. Squeeze out the water and then add rest of the ingredients.
@Anusha- You can skip bread crumbs, I have added them to give some extra binding.
