Quinoa has been part of our diet for quite some time now. This is a great replacement to rice if you
are trying to lose weight. Quinoa is gluten free and high in protein, iron, magnesium and calcium.
It increases metabolism and reduces food craving. How about we add quinoa instead of rice for our
traditional fried rice?
Quinoa fried rice is a very simple and healthy dish that anyone can make it. It takes just 20-25
minutes cooking time if all the ingredients are ready. It need all basic ingredients which are easily
available in anyone's kitchen. This is a great dish for lunch boxes or for dinners. Lets get started....
This recipe goes to week 2 Day 2 of Blogging Marathon 132 under the theme " Fast dinners ready in
30 minutes".
Ingredients:
Quinoa 2 cups
Eggs 2, Whisked
Carrots chopped 1/4 cup
Green peas ( frozen ) 1/4 cup
Onion chopped 1/2 cup
Chopped garlic 1/2 tsp
Chopped green onion
Salt to taste
Black pepper as per taste
Soy sauce 2 tbsp
Chili sauce 1 tbsp ( optional )
Oil 1 tbsp
Butter 1 tbsp
Preparation:
Wash and cook quinoa with 4 cups water.
Cook on medium high flame until all the water evaporates.
Now turn the flame to medium low, cover and cook for 5 minutes.
While the quinoa is cooking lets cook our veggies.
Heat a non stick pan add butter, once the butter melts add eggs and scramble them.
Transfer the scrambled eggs to another bowl.
Now add oil, when it is hot add garlic and onion.
Saute for a minute and add chopped carrots, frozen green peas, salt and pepper.
Cook until the veggies become soft.
Now add cooked quinoa, soy sauce and chili sauce.
Toss it well, add scrambled eggs, chopped green onion and cook for another 2-3 minutes.
Serve hot.
